Potato Soup is a must make recipe.  My Aunt Amy shared this recipe with me and it has been a hit in our family for as long as I can remember.

One day, when I was living on roman noodles and cereal, I picked up a good size bag of potatoes because they were on sale.  I had an idea that I would start to make baked potatoes since I was tired of the alternative.

Big Red Recipe Book

I found the Big Red Recipe Book when,

I went to Husker Hounds to get a game scheduled for my kitchen and just look around when I ran across a recipe book that was written by Nebraska football players

I  thought to myself this book was written for some like me, a true Husker fan and a foodie.  Plus it supports their favorite charities.

I am going to start trying the recipes and sharing my thoughts, on CornHuskerCooking.com

Tater Tot Casserole

Tater Tot Casserole is famous because of the show 19 Kids and Counting

They made a tater tot casserole and everyone was just raving about it.   I found the recipe online and of course tweaked it for my family since there are only 4 of us.

I consider it a dump meal, which means you dump all the ingredients and cook it (in a nutshell).   That does not mean it tastes bad, normally dump meals are fantastic.  Everyone seems to look them especially kids.

Plus it’s easy to make and there aren’t that my pots and pans to clean after.
