Instructions
  1. Heat oil in skillet or saucepan over medium heat
  2. Stir in onion and cook until translucent (about 5 minutes)
  3. Add rice and stir frequenty for 2-4 minutes so the grains do not burn
  4. Add tomatoes and chicken broth and mix to combine with the rice
  5. Brin to a boil, then reduce heat and simmer. Cover pan and cook on low for 25 minutes. Stire occasionally to prevent rice from sticking to bottom of pan.
  6. Remove from heat and fluff, let sit for at least 5 minutes
  7. Add cheese to top and cover, so it melts
Recipe Notes

Sometimes I don’t use chicken broth from a can. I just mix 2 cups water and 2 teaspoons chicken bouillon.
