Here is the first recipe post and review for “Big Red Recipes” Healthy Chicken and Rice
I really started with Mama B’s Hearty Lasagna added by Rex Burkhead, but I am giving that another go because I almost burnt the first batch. Don’t get me wrong it was good, but I think I could do much better.
Healthy Chicken & Rice was very good. I think I’m adding it to my list of favorites. It was so good that there weren’t any leftovers. I enjoyed the dish on a plate but my husband put everything in a tortilla and made into a burrito, which was just as good.
One thing I did change in my recipe is the type of rice; I use long white rice instead of Instant Basmati Rice. My husband said I should use chicken stock next time, to add more flavor but I told him that would be unhealthy.
I still love the recipe it is easy to make, my son liked helping me and bonus it is healthy.
