Here is the first recipe post and review for “Big Red Recipes” Healthy Chicken and Rice

Healthy Chicken and Rice was added to “Big Red Recipes” by Adi Kunalic the placekicker for Nebraska Football between 2007 – 2010.

I really started with Mama B’s Hearty Lasagna added by Rex Burkhead, but I am giving that another go because I almost burnt the first batch.  Don’t get me wrong it was good, but I think I could do much better.

 

Healthy Chicken & Rice was very good.  I think I’m adding it to my list of favorites.  It was so good that there weren’t any leftovers.   I enjoyed the dish on a plate but my husband put everything in a tortilla and made into a burrito, which was just as good.

I also had to guess if the mustard was “Yellow Mustard” or “Ground Mustard“.  Needless, I figured it everything out.

One thing I did change in my recipe is the type of rice; I use long white rice instead of Instant Basmati Rice.   My husband said I should use chicken stock next time, to add more flavor but I told him that would be unhealthy.

I still love the recipe it is easy to make, my son liked helping me and bonus it is healthy.

Instructions
  1. Preheat oven to 425 degrees
  2. Cut the chicken into small pieces
  3. Add chicken to a large bowl and add mustard. Stire well to cover all of the pieces of chicken
  4. In a small bowl combine cumin, garlic salt, and lemon pepper.
  5. Add seasoning mix to chicken and stir or toss until chickens coated
  6. Lightly spray a baking pan with non-stick oil. Add chick and back for 15 minutes
  7. In a large skillet, spray with non-stick oil.
  8. Over medium to low heat add pineapple and bell pepper. Stirring occasionally, cook for about 15 minutes or until the chicken is done
  9. Add the cooked chicken to skillet and turn heat to high, stirring quickly and allowing the pineapple and bell peppers browned on one side (3-5 minutes)
  10. Serve over rice and enjoy!!
