Pepperoni Lasagna Roll-Ups

Pepperoni lasagna roll-ups are great for a family meal.   It’s a great way to use up all of those lasagna noodles.

I made this a few times and got the recipe from Taste of Home.  If you have extra ricotta, cheese use add it to crackers while you wait for the food to cook.

The original recipe used only 3 noddle’s but that wasn’t going to work in my house.  You can really make as many as you want as long as you have enough cheese, meat, and sauce.

Even put it back in the fridge for a late night snack.

Try it with a light salad or breadsticks.

Instructions
  1. Preheat oven to 350°
  2. Cook noodles according to package directions; drain.
  3. Combine the ricotta cheese, chives, oregano and basil
  4. Spread chees over each noodle to within 1/2 in. of edges.
  5. Top with pepperoni and Swiss cheese; carefully roll up.
  6. Place seam side down in a greased shallow 1-qt. baking dish; top with spaghetti sauce.
  7. Cover and bake at 350° for 20-25 minutes or until bubbly.
  8. Sprinkle with Parmesan cheese. Let stand for 5 minutes before serving.
